Erik & I are huge fans of bowls. For starters, they are just so EASY & versatile. Whenever it’s one of those nights where I don’t want to deal, I just whip something up in a bowl. { the bowls we like to use are here }

If you meal prep & have grains or protein on hand, that makes things SUPER easy too.

If not, it only takes about 30 minutes to prepare from start to finish.

Medierranean is one of my favourite cuisines. I just find it so fresh, light, & delicious – I never get sick of it!

Speaking of versatility, this is super customizable. I swap out the quinoa often for cous cous or lentils. You can use whatever vegetables you have on hand, as well!

I keep everything raw because as much as I want to say it’s to get all the nutrients from the veggies, I’m a pretty lazy girl.

Speaking of lazy, you can make ahead the quinoa & chicken ahead of time for meal prep. May I reccomend my slow cooker Mediterranean Chicken? {told yall I love Mediterranean cuisine}.

I don’t have any quantities for the vegetables listed – use as much or as little as you want, but I like to LOAD MINE UP.

Also, here is my recipe for tzatziki. I LOVE this stuff but if you want a lazy girl version, just take greek yogurt & grate in a cucumber & mix with salt and lemon and let it sit in the fridge for at least an hour {the longer it sits, the better it gets}. Super fresh & healthy!

MEDITERRANEAN BOWLS

ingredients

1/2 Cup of Quinoa {or any other grain} per person

1 chicken breast per person

Cucumber

Cherry tomatoes

Carrot

Handful of greens

Mint

A spoonful of Tzatziki per person

Lemon

Salt

Pepper

Chile flakes

Olive Oil

optional

feta cheese, sprinkle per person

chickpeas

directions

pat dry chicken, drizzle both sides with olive oil & top with salt, crushed red pepper, & oregano. Set aside.

Rinse quinoa & add to a pot with 2 cups of water. Bring to a boil & then simmer. Cover & cook for 10 – 15 minutes. When finished, turn off heat & keep covered.

While quinoa cooks, prepare the vegetables. Slice cucumber at an angle to oval-ish disks. Julienne the red pepper. Peel & cut carrot in half and then cut into strips. Halve the cherry tomatoes & put in strainer over the sink. Mix the mint with the greens & tear with your hands.

Cook chicken as preferred. I like to grill mine or pan fry. Basically, cook for 5-7 minutes on each side or until done. Let cool & slice lengthwise.

Prepare the bowls! Put quinoa at the bottom & put in the vegetables & chicken {or chickpeas} however you want! Add in a scoop of tzatziki, feta {if using} & squeeze a lemon! Season with salt, pepper, & chili flakes & serve immediately. Enjoy!!

:: TIPS ::

sprinkle sea salt & cracked plack pepper over the halved cherry tomatoes & drizzle with olive oil. DIVINE!

if making with chickpeas, toss the chickpeas with a drizzle of olive oil, squeeze of lemon, red chili flakes, oregano, & chopped garlic!

Feel free to sub tzatziki or chicken with hummus!

Would be delicious with salmon or lamb!

Prepare the chicken and quinoa in advance, and this turns into a 5 minute meal. All you have to do is chop the vegetables

Great hot or cold!

I’ll get it all on the blog but some of the standout pinots were:
⚜️2016 Pratt Vineyard {Sonoma Coast} :: the Sonoma Coast is my fav region up here. More on that another day but this was SO GOOD. Think lavender, violet, dark fruit, blood orange, & racy acidity... dying to be drank w some proscuitto
⚜️ 2016 Sundawg {Russian River Valley} :: bright juicy cherries with a toasty nuttiness and tomato leaf - seriously!! Each sip just begs for another and another and another...
⚜️2016 Stanly Ranch {Carneros} :: lush berries, Tahitian vanilla, & cigars. A pinot with some serious sex appeal. This wine is def one to impress... but make sure your company is worth it, like don’t waste this on a kcufboy lol
...we even got to taste a 2002 Carneros Pinot which was just SMASHING. It’s amazing how complex and intriguing it was.
