I may be in the minority here but I absolutely LOVE Daylight Savings in the spring.

The extra hour of sunshine is SO NECESSARY.

Not only is it worth its weight in gold for us bloggers, but I feel like it just brightens up the mood ALL AROUND.

I swear, for the past two months in San Francisco, it has been rainy AF. To the point where I actually kind of felt it hit my mood. Every single day was gray & dreary.

Then, the clocks move up an hour, & it’s as if it just reset San Francisco. Every day has been bright blue skies & sunshine… it actually feels a bit like summer here.

The temperatures are slowly going up but it’s just so nice to see that sunshine in all it’s glory… AND an extra hour of it.

SO- I’m feeling that change & it absolutely has shown in the kitchen this week.

Ok enough about the weather… Let’s get straight into things, shall we?

THIS RECIPE is one of my favourites and as the weather gets warmer, it’s an absolute must. It is light, fresh, & SO TASTY. Also, the options to use it are endless.

It takes two seconds to put together… seriously, the hardest part is chopping everything up.

I keep mine super simple: just cherry tomatoes, fresh herbs, green onions, lemon, sea salt, & olive oil. That said, it is also SUPER versatile.

Basically, any herbs will work but I really like mint & basil. I feel like it adds a cool freshness to things. Other herbs that would be fun are: cilantro, parsley, tarragon, or thyme.

You can also add various vegetables! This would do really well with some chopped bell peppers, cucumbers, & sweet onions.

This uses green onions {I seriously can put them in everything!} but could absolutely add some garlic or shallots.

As far as dressing, it’s as simple as can be: fresh lemon juice, extra virgin olive oil & sea salt. I’d use fresh cracked black pepper but we are out & I keep forgetting to pick some up at Whole Foods!!!!! It’s been like three weeks now!! It’s totally fine without it {in fact, in the book from this post, chef Marco says salt seasons & pepper flavours so when seasoning, just use salt} but would be lovely with it.

Mix everything with your hands & you are all set!!

EASY.

What’s great about this, is the options to use it are TRULY endless. I love it alone as a salad {add some hemp hearts or sliced chicken breast for protein!!} with some grilled pita bread.

It’s also delicious mixed with pasta {hot or cold}, served on steak / chicken / seafood, on top of crusty bread like a bruschetta… go crazy.

The flavours are so fresh, simple, & really play well off of each other. You can’t go wrong!

Fresh Herb & Tomato Salad

ingredients

cherry tomatoes

fresh basil

fresh mint

scallions

lemon

olive oil, a drizzle

sea salt & black pepper, to taste

directions

slice cherry tomatoes & put in a strainer over the sink to remove access liquid as you prepare the herbs

using your [clean!] hands, tear the basil & mint {you can also use a knife but I find torn tastes better} & slice up the scallion with the knife. Use as much as you want but I basically did 5 leaves of each herb and 1 scallion stalk.

add everything into a bowl. squeeze lemon, drizzle in olive oil, & sprinkle the salt. Mix with clean hands until fully combined.

Serve & finish with some freshly cracked pepper!

You could even prepare it fresh at the office if you wanted for a quick and easy lunch. I used to do things like this ALL the time when I worked at the bank. ⚜️2016 Pratt Vineyard {Sonoma Coast} :: the Sonoma Coast is my fav region up here. More on that another day but this was SO GOOD. Think lavender, violet, dark fruit, blood orange, & racy acidity... dying to be drank w some proscuitto
⚜️ 2016 Sundawg {Russian River Valley} :: bright juicy cherries with a toasty nuttiness and tomato leaf - seriously!! Each sip just begs for another and another and another...
⚜️2016 Stanly Ranch {Carneros} :: lush berries, Tahitian vanilla, & cigars. A pinot with some serious sex appeal. This wine is def one to impress... but make sure your company is worth it, like don’t waste this on a kcufboy lol
...we even got to taste a 2002 Carneros Pinot which was just SMASHING. It’s amazing how complex and intriguing it was.
