To make vegetarian, cook lentils & whiz in a blender or food processor with some vegetable broth, a kiss of apple cider vinegar, & garlic clove to a “falafel” like paste. Use that in lieu of the ground beef.
when using wine, I like to use a splash of whatever I plan on drinking with it that evening! Fun because you can go red or white… anything works!
I used parsley & kale because it’s what I had on hand but you can use literally any greens and any herbs! Go crazy!!
