Ferdi-inspired meatballs!

easy meatballs inspired by our favorite cafe in Paris!


as far as ingredients, I always eyeball as I cook for two. Make everything to your liking! If you ever have any specific questions, just let me know. 



  1. In a large glass mixing bowl, add ground meat, parsley, kale, parmesan cheese, olive oil, sea salt, chile flakes, & squeeze of half a lemon. Mix with your hands until combined.
  2. Using a skillet, heat oil over medium- heat. Add the meatballs & sear the sides, ~2 mins per side.
  3. Squeeze other half of lemon {or add wine!}, add a  lower heat to low, cover & continue to cook, ~10 mins. Uncover, and continue to cook
  4. Serve over pearl couscous, orzo, or any grain really!


Also delicious with zoodles!

To make vegetarian, cook lentils & whiz in a blender or food processor with some vegetable broth, a kiss of apple cider vinegar, & garlic clove to a “falafel” like paste. Use that in lieu of the ground beef.

when using wine, I like to use a splash of whatever I plan on drinking with it that evening! Fun because you can go red or white… anything works!

I used parsley & kale because it’s what I had on hand but you can use literally any greens and any herbs! Go crazy!!
