{ COOKBOOK CLUB }: Giada de Laurentiis “Happy Cooking”

Hey guys!

Happy Tuesday, errrrr, as you can see, I took the day off yesterday.

I’m pretty transparent here, sooooo if we are being honest, I had a major case of the Mondays. Like, I left my computer at home and forgot to bring it to work kind of day.

Over the weekend, all Erik & I did was sleep. I’ve been feeling pretty beat lately so I’m trying to feel better & not so chronically exhausted all the time.

Anyways, I hit the gym for the first time in about two weeks and feel a lot better already. It’s not really a rut {thank g bc that was annoying}, but moreso that I am just flat out exhausted all the time. Anyone have any ideas how to get my energy levels back to balanced?? I am in DIRE need of it. It’s not even a need of needing sleep because I get plenty, I just feel exhausted mentally & physically all the damn time. Anyone else get the difference or am I going crazy?

Anyways, enough with my sob story, le’s get into March’s cookbook:

Happy Cooking: Make Every Meal Count… Without Stressing Out by Giada deLaurentiis

{ buy H E R E }

It’s no secret I love Giada! This is one of my favourite books ever. In fact, it is one of my favourite books of hers next to Feel Good Food.

Every recipe in here are ones that she enjoys to make at home or for herself. They are recipes that truly excite her & bring peace after a long day. ps – #SAME

This book came out on the heels of her divorce. It was a tough year for her and she found at the end of the day, coming home to cook for herself or her daughter gave her a sense of peace… & so the book was coined “Happy Cooking”. {source}

It’s also a mix of lifestyle & recipes: for example, she talks her nightly routine, love for yoga, what’s in her purse, where to buy cooking supplies, etc. I personally love cookbooks like this, because it’s literally everything I look for in a blog!

Also, she has some pretty cool chapters in there. Yes, there are the usual suspects like Breakfast {including Eggs Cacio e Pepe}, Snacks, Salads, Soups, & of course Pastas…. but then she has a section for Clean Eating, Weeknight Dinners, Weekends & Holidays, and includes some of her juice and smoothie recipes!

As far as the cookbook club, I am going to make the following:

Skinny Chicken Parm {Weeknight Warriors section} – page 175

Hummus Salad {Salads & Seasons Section} – page 88

I am changing up the way we do things here with the cookbook club… again! Ok so a recipe weekly is tough, so I am going to do at least two a month. I’ll mention the two I will do FOR SURE {plus, I think it’s important to know what I’m cooking in case you’re on the fence for the book}.

I might throw in another here or there, but you can expect two recipes a month! In fact, it was hard to choose just two, because there are sooooo many I want to make, like her BANANA tea, Orange Is The New Healthy juice {!!!}, matcha chicken tenders, detox soup… omg so many.

So come cook with me! I’ll have a recipe for you next week. Plus, I find this book is super appropriate with how I’m feeling. Let’s sub in the therapist for Giada & let cooking be the remedy, shall we?

Sorry again for all the changes! I knew the first month or two would have a LOT of trial and error! Eventually we’ll get into the swing of things.

Anyways, let me know your thoughts!! Anyone love Giada as much as me?

In fact, while we’re talking about her, check out her quinoa pilaf & eggs cacio e pepe recipes here on the blog!

Now what say you? Excited for this book? Any other cookbooks I must check out? Anyone do anything fun over the weekend? let me know!

xx Shannon

That’s how I connected with @future_vizion - not only is he BEYOND talented {seriously, check out his profile}, he has such a unique eye and perspective... not to mention it’s kind of totally rad making friends around the world, especially in a city I’m so passionate about! #slstokyo
