2 Ingredient Coconut + Cherry Smoothie by What Annie’s Eating

Have you ever had a blogger that you come across online & just fall head over heels in love with?

Well, that happened with me with Annie Garcia of What Annie’s Eating !

Basically, I found her on Instagram which led to me stalking her blog & reading every single post.

Annie Garcia is a recipe developer and the food blogger behind What Annie’s Eating. Her tagline is “sometimes healthy, sometimes indulgent, always delicious” & I couldn’t agree more.

Is it possible to have the same “cooking vibe” as someone? Because Annie & I totally do .She has the exact same approach to cooking as I do, which is a big reason why I devoured her blog in one sitting

Every single recipe she has, I wanted to make. She keeps ingredients minimal, seasonal, & complementary. In fact, she even develops recipes for goop!

A few weeks ago, she posted a unique yet simple yet OH SO GOOD recipe for a smoothie. Literally, it was only 2 ingredients.

& those ingredients? We had on hand! I rushed to try it & it was a major win.

It’s one of those smoothies that as you’re drinking you think that this can’t POSSIBLY be healthy because it’s so good… like a milk shake.

The 2 ingredients?: Tart cherries & coconut milk.

The creaminess of the coconut milk complements the flavours of the cherries in a next level way. It’s an unexpected pairing that meshes oh so well together.

I didn’t have Tart Cherry juice on hand but I did have the WTRMLN WTR with Tart Cherries. It’s one of my favourite juices on the market: cold pressed watermelon with a kiss of lemon. This edition was a blend of watermelon & tart cherries & worked perfectly with it!

As we are getting into fall, try subbing the cherries with pomagranite juice or even blend it with some persimmons! It’s a perfect way to transition coconut milk based drinks from summer to fall.

& if you want to add some alcohol to the mix, go for it! A splash of red wine will add a complexity & this would be delicious with vodka or tequila 🙂

♡ ANNIE’S COCONUT + CHERRY SMOOTHIE ♡

serves 2

< INGREDIENTS >

2 Cups frozen pitted cherries or 1.5 cups of juice
1 and ½ cups canned coconut milk
Handful of ice cubes (about 4)

O P T I O N A L

Pinch of Salt
heavy splash of wine or 1-2 shots of liquor

< DIRECTIONS >

Put all in a blender {I have this one!} & blend until smooth!

If freezing, put in a freezable container or popsicle mold! If using alcohol, it won’t freeze fully unless stabilized with gelatin or something of the sorts so I recommend drinking like a milkshake!
