This is my absolute fav breakfast taco!! It’s a winner for sooooo many reasons. Not only is it totally easy, it’s pretty healthy and takes NO time to make at all. Seriously, 10 minutes from start to finish!

With the exception of prosciutto, in the morning, I try to keep things meat free. One of my fav ways to make eggs is scrambled with a little olive oil. I love the rich texture it provides!

The only reason this doesn’t have cheese was simply because we were out! Feel free to add some!

10 minute breakfast taco

Ingredients

  • olive oil
  • onion, diced
  • jalapeno, diced
  • egg
  • tortilla
  • salsa verde
  • maldon salt

Instructions

  1. In a pan over medium heat, add a drizzle of olive oil. When glistening, add onion & jalapeño. Lightly sauté until nice & tender but still with a bite, ~2-3 mins.
  2. As you wait for the pan to heat up, in a small bowl, take an egg {1-2 per person}, a kiss of water, & sea salt & beat with a fork until fully mixed. 
  3. When vegetables are ready, lower heat to low & add the egg to the vegetables & olive oil mix. Let it cook, untouched for about 1 minute. Take a wooden spatula and run through it to break things up. Continue to cook, 2ish mins. Once ready, flip & scramble. You’ll know when it’s ready because the bottom half will look “fluffy”. I like a light scramble as it keeps things fluffy!! Continue to cook until everything is fully cooked & scrambled to your liking.
  4. After you flip the egg, heat up another burner. I go full bore at high for this but keep a VERY watchful eye. Over a non stick pan, take your tortilla & heat it up. 10-30 seconds per side. Add to plate.
  5. When eggs are ready, build your taco! Add the tortilla mixture, top with some chopped jalapenos, a squeeze of lemon,  salsa verde, & maldon sea salt

Notes

delicious with chopped prosciutto too! If using, either cook it with the vegetables {this will add a nice savory flavor to the eggs!} or if you prefer uncooked, add it as you build the taco.

Go crazy with greens!! Feel free to top with shredded kale or spinach for some added freshness.

Going low carb? Add an extra egg & make a scramble. I like to serve over some chopped kale or spinach
